Quick & Healthy Cake/ Bread Loaf Recipe ~ Sugar-free afternoon tea cake in the microwave
Ever felt like life would be so much easier if you had a ready-to-grab healthy breakfast that was easy to make and left you full for hours? If you answered "absolutely," I am right there with you because eating healthy can be quite a fuss sometimes. But with today's recipe, you'll stop worrying about this for as long as possible!


This is because this entire "tea cake" or bread loaf (it works with anything, honestly) was prepared in no time in one container and popped in the microwave for less than 15 minutes!



To prepare a medium-sized loaf you'll need:

First

3 eggs

1 cup yogurt

1/2 cup milk of choice

Honey/ maple syrup to your liking (optional)

blend using a kitchen machine (or any other blender you may have)



Second

Prepare in the blender:

1/2 cup flax seeds

1/2 cup wheat germ (can be replaced with more flour/ground oats)

1 cup oats

pinch of salt

1 tbsp baking soda

1 tbsp baking powder

1 tbsp cinnamon (optional)


Third

Add the products of the first step (wet ingredients) to the products of the second (dry ingredients) slowly and mix well until a thick (not runny) consistency is achieved.


Fourth

Gently transfer the mixture into a mold (in my case, my Tupperware loaf pan since I'm using the microwave). If you prefer to use the oven, just use a normal pan/ mold that goes into the oven (you can try this set of disposable loaf pans). In this case, I recommend greasing the pan first, but if you want to skip the grease, use parchment paper instead.


I leave it in the microwave for about 13 minutes.

When it's ready, I let it air out and slice it.
I usually have it with tea and some sauce (especially since I leave out honey when preparing the base). Sauces can range from chocolate to plain honey or even molasses. I also sometimes have it with fruit. If you don't add any sweetener to it, it turns out neutral, more like bread—perfect for a quick savory breakfast too! I store the slices in a normal fridge container and the loaf lasts me about a week.
