Healthy Chocolate Cake: Microwave Bake with Simple Ingredients
With fall just around the corner, what better way to celebrate than to leverage our baking skills and bake a classic, cacao-filled tea cake? 🍂☕

Even though chocolate is not my first choice and just not my favorite flavor, I'll go for it in a heartbeat if it means that I'll have a quick, filling, antioxidant-packed breakfast like the one we have at hand today.


"Cacao is one of the richest sources of antioxidants on Earth. It’s packed with a wide range of polyphenols and flavanols and competes with superfood stars like goji berries, acai, and blueberries in its impressive antioxidant load. Antioxidants fight free radicals and oxidation in the body and offer an abundance of anti-inflammatory and anti-aging effects. The antioxidants in cacao appear to be highly bioavailable, meaning our bodies absorb them incredibly well."

Not only is our recipe today healthy and filled with cacao, but it is also super simple and easy to follow.
Count me in!

We'll need:
  • 100 g raw cacao
  • 100 g shredded coconut
  • 3 eggs
  • 1 cup yogurt
  • 1 tbsp baking powder
  • 1 tbsp vanilla
  • 2 tbsp sweetener of choice


  • Blend the eggs, yogurt, and vanilla. 

  • Mix all the remaining, dry ingredients (raw cacao, coconut, baking powder, and sweetener) in a separate bowl.
     
  • Slowly add the dry ingredients to the wet ones, and then mix them all carefully.
     
  • You can add some milk of choice or water to adjust the consistency.


I poured the final mixture into a microwave cake mold that you can find in my post here and let "bake" for 13 minutes. That's literally everything you need to do!


Once it's done, take it out of the microwave and let it cool down before taking it out of the mold. I like to slice it while it's still a bit hot.
