Three-ingredient Healthy Soft-baked Cookies Recipe

Up for some spring baking?
I'm not much of a baker myself but I certainly enjoy an easy bake. This is exactly what I have for you today.
These soft-baked cookies are neither sweet nor savory, so you can make them anything you like. The best part is that I only used 3 ingredients!
Preheat your oven to 180 degrees.
Ingredients
- Cottage cheese (500 g) frozen overnight.
- Plain yogurt (3 small cups, 3 X 105 g).
Mix both (with a hand blender or food processor)
In another bowl, mix 500 g oat flour (or make your own) and 2 tbsp. baking powder.
Slowly add the dry ingredients (oat flour and baking powder) to the wet ingredients and mix until a uniform dough is formed.
Prepare a tray and line it with parchment paper. I also brushed the paper with the smallest amount of olive oil to prevent the cookies from sticking to the paper.
Shape the dough into any shape you like and carefully place the cookies onto the tray. Brush them with some milk or water so the top parts don't dry out in the oven and burn.
Bake for 15-30 min; after 15 min, check on the cookies by lifting them up to see if the bottom part has become brown. If so, turn off the oven and leave the tray inside until it's cooled down.
