Healthy & Simple-Ingredient Cookie Recipes for Eid ~ Coconut Shreds & Date Biscuits

Happy Spring!

What better time to experiment with baking than spring and, for those who celebrate, Eid!
Promise, you don't need to be a skilled baker to make these delicious yet simple cookies. The ingredients used are also really simple and are most likely lying on your kitchen counter already. So break them out and let's bake these cookies!



1. Let's start with these simple, 3-ingredient coconut cookies.
What you'll need:

  • Coconut shreds (about 1 cup)
  • 2 eggs
  • Sweetener of your choice (I used two sachets of stevia)

Preheat the oven.
Beat the eggs and add the sweetener to the mix.
Add coconut shreds slowly and mix until you get a uniform consistency that holds shapes.
Shape your cookies into whatever shape you like; I used a teaspoon for almond shapes.
Bake at 180 degrees for 15-20 min.


Let them cool down and enjoy!


2. Next, let's make date-filled oat cookies.


You'll need:

For the cookies:
  • Oat flour (2 cups)
  • Almond flour (1 cup)
  • Baking powder (1 tbsp.)
  • Pinch of salt
  • Butter of choice (1 tbsp.)
  • Water
Filling:
  • 7-8 pitted dates
  • Sesame seeds (1 tbsp.) or oil
  • Brush of egg yolk & milk (tbsp.)


Preheat your oven.
Prepare the filling by pitting 7-8 dates and blending them with the sesame seeds.


In a bowl, mix all dry ingredients: oat and almond flour, baking powder, and a pinch of salt. Mix in the butter. Slowly add water and mix until a uniform consistency is formed and can hold shapes [neither runny nor hard]. Mix well with your hands and flatten the dough with a rolling pin. Use a cup to cut out circles in your dough, add the filling to the center of each circle, close it, and roll it between your hands to form a ball. You can flatten each ball to form a cookie shape, and if you run out of filling, you can place any nut of choice at the center of the cookie like I did in the photo. Poke each cookie lightly with a fork to ensure even baking.


Prepare the topping mixture by mixing one egg yolk with a tablespoon of milk.


Carefully place each cookie in a tray lined with parchment paper and brush each cookie with the topping mixture. Bake the cookies at 180 degrees for 30 min.


The oat cookies can be quite friable when hot, so I'd let them cool down completely before indulging. That's all for today's post, but there are many other recipes that you can choose from:
