Healthy Carrot Cake Recipe with Oats, apples, and honey | Autumn, at Home Baking Tutorial for Beginners

Autumn is officially here, and I don't know about you, but this time of the year usually inspires me to brush up on my baking skills. 


I usually like to try out different recipes to find a healthy-ish version that works for me, like when I made this healthy banana bread in spring, or when I made these delicious oat cookies. This time around, I'm making my own version of a healthy, Autumn-inspired carrot cake; my favourite thing to get from Starbucks is the carrot cake.


 However, I always find it too sweet and I just don't feel good after I have it—too dense for my liking, especially the icing. So, with the help of my mum who put together this recipe, I'll share with you everything you need to do, from start to finish, to bake this fudgy, homemade carrot cake, which makes for a perfect, sweet breakfast.


Mix the following dry ingredients in a large bowl:

- 3 large grated carrots 

(or 5 small ones)

- 1 cup of oat flour

- Half a cup of quick oats

- A packet of baking powder

- Half a cup of shredded coconut

- 2 tbsp. of ground cinnamon

- A packet of vanilla powder

(or a tsp. of vanilla extract—added to the wet ingredients)

- Some nuts/ raisins (optional)


In a blender, add the following wet ingredients:

- 3 whole eggs

- 3/4 cup of milk

- 1/4 cup of coconut oil

- 2 stewed peeled apples made into a paste/ apple sauce

(as a butter replacement, or you can use a tbsp. of butter instead)

- 1 cup of honey/ maple syrup

and blend away...


- Preheat the oven to 180 degrees

- Mix both wet and dry ingredients 
(try a kitchen machine for this step)


(the deeper the pan, the fudgier the cake turns out)

- Pour the final mix into the pan evenly (even out the top with a spatula)
 and pop it in the oven.


I generally like to leave the cake in the oven after it's turned off for a little while.

Let it cool down (try a cooling rack)
 and start adding some toppings if you like, I personally

like to drizzle some honey and have it with tea.
